Boxty
This is Ireland's form of a potato pancake. As in other cultures, there are many versions of preparing the Boxy. Some folks use leftover mashed, some use just grated potato & others use a little of both. Killarney's uses grated w/grated carrot & green onion for flavor. It is then cooked on the flat top till cooked through. Once cooked, you merely put it on the plate, top it with a filling & fold it over. We serve it with a little salad on the side.
